In zones 3-10, Red cabbage are a staple in your cool climate Organic garden and prefer full sun during the cooler part of the year. Starting red cabbage in pots is recommended. Start 8 weeks early in pots and transplant 4 weeks before your first frost in the spring. You can also start them in late summer for a fall crop as they will not take high summer heat. Use deeply watered soil and place them on the surface lightly covered with vermiculite or sand as they need light to germinate. When seedlings develop their first set of true leaves and are at least 5-6 inches tall, transplant to the garden about 12 inches apart. Cabbage are known to be heavy feeders. Be sure to incorporate compost and a granular fertilizer into the soil before you plant. Red cabbage thrives in deeply watered soil.
