For zones 3-12 cauliflower are a staple in your Organic garden and prefer full sun. Start 4 weeks early in pots and transplant 2 weeks before your first frost in the spring. You can also start them in late summer for a fall crop as they will not take high summer heat. Use deeply watered soil and place them on the surface lightly covered with vermiculite or sand as they need light to germinate. When seedlings develop their first set of true leaves and are at least 5-6 inches tall, transplant to the garden about 18 inches apart. If starting seeds early in pots, gradually expose the seedlings to the weather for short periods of time before planting in the ground. Cauliflower need to have consistently moist soil. In the spring work your garden soil 6" deep and sow seeds 1/4" deep and 18" apart.

Pick Cauliflower when the head feels firm and 6 to 11 inches long. Cauliflower is very versatile and enjoyed fresh and cooked. Weekly watering of 1- 1/2 - 2 inches directly on the roots is preferred.
